I don't know about you, but I've truly been living life in the fast lane lately.  We recently took a trip to the Creation Museum (click here to find out more: Creation Museum) It was amazing and well worth the 80+ hour drive! 

Then today I made fresh-baked pizza using a gluten free mix (click to see my new favorite pizza mix).  The smell of it was tantilizing!  The taste?  Even better!  I made my own tomato sauce too to go with it and it was delicious!  For those of you out there who love to bake, I will share the recipe quickly here.  Otherwise, scroll down for more of the update of my life :)

Yummy Gluten Free Pizza

You can make this using regular crusts so it doesn't necessarily have to be gluten free!  Yields 2 small pizzas (3 servings)

1 box Duinkerken Gluten Free Pizza Crust mix (follow directions on package and let rise 20 minutes) or your own pizza crust

2 cloves garlic, crushed

1 tsp Marjaram, dried

1 tsp basil, dried or fresh

1/4 tsp onion salt

1/4 tsp pepper, freshly ground

1 tsp oregano, dried

1 1/4 cup tomato puree (a plain sauce with no seasonings)

1/2 Tbsp. olive oil

Your favorite toppings (green peppers, mozza cheese, pepperoni, mushrooms, pineapple....)

After pizza crust has risen in a covered bowl for at least 20 minutes (I stuck my bowl in a warm oven), take out of bowl and plop onto greased pizza tray or stone.  Spread out into 2 pizzas using your hands or a rolling pin.  Leave it to sit on the tray (it will rise more) and start your tomato sauce.  Combine garlic, marjaram, basil, onion salt, pepper, oregano, and tomato puree in pot and heat on low heat for a few minutes until warm.  Add oil, stir, then pour contents into bowl.  Now spread tomato sauce on the pizza crusts, top with cheese and your favorite toppings.  Bake in hot 400F oven for about 10-15 minutes or until crusts are slightly golden (not brown). Slice, serve up, and enjoy!

Alright, back to the update!  Well, we also got started "officially" doing homeschool today.  We did do some before our trip, in August and beginning of September, but now we're back at it.  It feels good to be back into the swing of things, although sometimes I wish Summer would last forever!  In these times I need to remember the old hymn When The Roll Is Called Up Yonder, because one of the verses of that song goes: "Let us labor for our Master from the dawn til setting sun.  Let us talk of all his wonderous love and care.  Then when all of life is over and our work on earth is done, when the roll is called up yonder I'll be there!"
