Living with a disease like celiac wouldn't be that bad. It would be fun to get all the attention and to pick out your own "special" food.  Well, at least that's what I thought until I had stomach issues and found out just recently I could have a wheat intolerance. I am on a wheat-free diet for at least 1 month. So this would be great! I thought.  But I soon found out just the entirely opposite.  You never realize just how many things are made with gluten, and we take for granted our breads, donuts, cookies, pasta, grains, noodles, muffins, etc., and we never imagine living without them! Everyday we eat breads or cereal, yet we never really think what life would be like with none of that.  No cookies.  No donuts. No bread.  No pizza.  No noodles. No cereal.  Have you ever thought about that?  Well, I hadn't until now.  We live in a country where there is plenty of yummy, starchy food for us to enjoy, so don't expect this blessing to never change.  If it does, I'll be ready...because I've been on this wheat-free diet, I've learned so many things, stayed healthier (in a way cause I can't eat so many sweets!!!) and it's opened up a whole new door for me...And by the way, I won't be looking forward to trying to go back on wheat in 9 days.  :-)
